Peaches & Over-Zealous Air Conditioners

I live with my Uncle and his family for the time being and my aunt has a huge stack of Gourmet magazines as well as a monthly subscription. I was flipping through one the other day and came across this recipe. It was really easy and even though it was a warm dessert- it was super refreshing during another one of Boston's muggier-than-Hell afternoons. I tweaked the recipe but it's pretty much the same. Enjoy!

Ingredients:
3 ripe peaches, halved and pitted
3/3 cup sugar plus 1 teaspoon sugar, divided
4 large egg whites
1 teaspoon vinegar
2 tablespoons finely chopped sesame candy or crushed amaretti
(I didn't use the sesame candy because I couldn't find any)



Preparation:

Put peaches, cut side up, on a baking sheet and sprinkle with 1 teaspoon sugar (total). Broil 4 to 5 inches from heat until tops begin to brown, 2 to 4 minutes.


(Note: DO NOT use parchment paper in the broiler unless you want to burn your house down!)

Beat egg whites with a pinch of salt in a deep bowl using an electric mixer at medium-high speed until foamy. Gradually add remaining 3/4 cup sugar, beating until white holds stiff, glossy peaks. Fold in sesame candy.

Place a dollop of meringue on each peach half and broil 30 seconds. Turn off broiler and leave peaches in oven just until tips of meringue are browned, 30 seconds to 1 minute (watch carefully). Enjoy!
